Colsten Basset Stilton

Origin:: Stilton is the only cheese in England that enjoys a legal name ‘protection’ and is made in just seven dairies in the Midland counties. The Colston Bassett dairy was formed in 1912 and is one of the smallest dairies in the Stilton-makers Association still making cheese today, it is considered to be one of the best Stiltons produced in this area.

Colston Bassett use a blue mould culture that works best at temperatures above 8 degrees centrigrade making the cheese ideal for further maturation. Inside the natural crusty rind the cheese has a delicious soft and creamy texture with a blue syrupy finish. The aroma is huge and spicy; the natural rind is edible and very pungent, the cheese is aged for approximately 4 months.

Match: Enjoy Stilton with an aged Port for a tradtional festive treat. Try also with Fine Cheese Co. Celery crackers - made to match perfectly with the salty, velvety richness.   

Storage: Double-wrap Stilton in greaseproof / wax paper, followed by foil to keep it soft and creamy. Store in the refrigerator and remove 30mins prior to eating.
