Jones LovesWillie’s Delectable Cacao Chocolate Bars
Willie is the only small cacao grower and producer in the UK. He has been farming cacao for more than a decade at Hacienda El Tesoro, his farm high in the mountains of Venezuela. His beans are traditionally roasted in his chocolate factory in Devon, England using 100-year-old machinery to produce an authentic, individual pure cacao and chocolate bars. The bars are made from beans selected by Willie from the very best cacao regions around the world. Our bars are all single bean origin of exceptional quality, each bar representing the natural flavour of the region. Like fine wine the beans will take their flavour from the soil in which they are grown.
As little processing as possible is used to make these bars, maximum taste with minimum meddling, as stated on the bar. The Indonesian 69, Madagascan 71, Peruvian 72 and Venezuelan 72 are made from 69%, 70%, 71% and 72% cacao solids respectively. The only other ingredient is raw cane sugar from Cuba. There are none of the usual added ingredients normally found in chocolate like vanilla extract or emulsifiers which can mask the natural flavours of the beans. RRP $9.90
Indonesian 69 Javan Light Breaking Sourced from the Island of Java, these bars are made from a highly prized strain of cacao. The beans are visually striking as they are exceptionally light in colour and they have a slightly higher cacao butter content than usual. The beans produce a surprisingly light dark chocolate with soft caramel notes
Madagscan 71 Sambirano Superior Sourced from the Sambirano Valley in North West Madagascar. Madagascar famed for its remarkable biodiversity, with many of its plant and animal life unique to the island, is well known for its superior cacao. The beans produce a bar with a wonderful natural flavour and juicy notes of summer fruits.
Peruvian 70 San Martin. The beans are sourced from the Departamento de San Martin in Northern Peru in the foothills of the Andes in the lush Amazonian rainforests. The beans from this region are naturally fruity with tropical fruit flavour notes.
Venezuelan 72 Hacienda Las Trincheras This is a very old hacienda which produces fantastic beans and is being helped by the Terra Viva Foundation. Terra Viva is a Venezuelan non-governmental organisation that encourages sustainable development through environmental programmes with a strong education focus. Willie visited this Hacienda 4 years ago and tried to buy the beans then and has now finally been able to purchase them. These exceptional beans produce a bar with smooth nutty notes.
Venezuelan 72 Rio Caribe Superior. The beans are sourced from the north eastern side of Venezuela. They take their name from the small fishing port of Rio Caribe on the Paria Peninsula which is sometimes called the “chocolate coast”. The beans from this region are full of flavour with smooth fruity notes and a well balanced chocolate flavour.
