sophisticated and bold, the tête de moine 5 tier cheese tower comes with earthy shades and plenty of character, excellent for celebrations of 110-120 people. constructed of artisan cheeses and the perfect accompaniments, this cheese tower deconstructs to a delicious grazing table for everyone to enjoy.
the cheese layers (from top to bottom tier) include:
camembert le fin normand: an authentic camembert is from normandy, an area of northwest france where cows graze on rich soil scattered with apple trees. some people claim to be able to taste a hint of apple in camembert, but overall, the cheese is more earthy and nutty. though often compared to brie, camembert is much more robust and complex.
tete de moine: which means “monk's head” is derived from its invention and initial production by the monks of the abbey of bellelay. it is not cut, but using a "girolle" or cheese scraper the cheese is formed into small rosettes which look like a girolle mushroom. this allows oxygen to contact the cheese surface which in turn enhances the bold, spicy flavor.
rachel: a modern, british, washed-rind goats’ milk cheese, made by pete humphries. he claims that rachel is named after a friend of his that is, like the cheese, sweet, curvy and slightly nutty. we don’t know rachel but can confirm that the cheese is all these things – it is a hard cheese that is washed in brine throughout its maturation with a complex, rich and nutty flavor. rachel is delicious drizzled with honey or with a spicy, fruit chutney. suitable for vegetarians.
chiriboga blue: anartisan cheese produced by an acuadorian cheese-maker, stamped proudly with his own surname arturo chiriboga. it was modelled on roquefort but tastes creamier and butterier than the peppery, assertive french classic. the smooth, spreadable texture is dense, evocative of frozen custard. the ivory interior with very few blue-gray streaks of veining produces a very subtle flavor of sweet cream and grass perfect for cheese mongers who have just started with their journey of blue cheeses. aged between 2 to 4 months.
alex: made by hofkaeserei krause (germany). a semi-soft table cheese that embodies the landscape of southern germany. using exclusively hay milk from these two herds, creates a cooked curd, pressed cheese that’s washed in local herbs at five months, imparting rich aromas to the rind and deepening the complexity of the paste, grass fed Swiss Brown cows’ in the bavarian bergkäse (mountain cheese) tradition.
