MIND BLOWING ROASTED CAULIFLOWER STEAKS WITH NOJO

SERVES 2 – TIME TO MAKE 25 mins

Ingredients:

Nojo tahini dressing
Cauliflower
1/8 of a small red pepper, finely diced
1 tsp of capers
1 tsp of caper juice
a few chives, finely diced

Method:

  1. Cut and prepare the cauliflower into two steaks
  2. Lightly oil and grill the cauliflower steaks till toasty
  3. Mix the capers, it’s juice, the red pepper and chives to make a garnish
  4. Pour some Nojo tahini dressing on a dish
  5. Plate the cauliflower steaks onto the tahini dressing
  6. Evenly distribute the garnish on top
  7. Serve & enjoy

SUPER SUMMER SALAD

SERVES 2 – TIME TO MAKE 5mins

Ingredients:

1 head baby gem lettuce (or any greens)
¼ red onion
¼ avocado
Nojo white miso sauce

Method:

Roughly cut ¼ red onion, thinly slice or dice ¼ avocado. Combine the lettuce, onion, and avocado in a bowl, drizzle with plenty of dressing, and serve.

ASIAN SLAW SALAD

SERVES 8 – TIME TO MAKE 30mins

Ingredients:

250g green cabbage or Chinese cabbage, shredded
250g red cabbage, shredded
2 large carrots, julienned
350g bean sprouts
3 scallions, finely sliced on the diagonal
1/2 cup coriander / cilantro leaves
1/2 cup mint leaves
Nojo sesame dressing
A few chives, finely diced

Method:

  1. Prepare the ingredients
  2. Mix them together in a deep bowl
  3. Add the dressing to taste
  4. Serve

*Why not make a whole bunch and keep
taking it to work throughout the week. It’s
a very simple salad, lasts very well in the
fridge, and the main thing is it’s absolutely
delicious. Also, a wonderful side to a
summer BBQ party.
