the cheese selections for the month are:
blue brie cotswold organic - the weaver family has been farming in the cotswolds for three generations, and in the southwest since before 1570. they are very proud to be organic farmers and set a lot of stores by the welfare of their herd. this cheese is distinguished from all our other brie’s by being blue. another organic soft white moulded cheese with a roquefort blue mould running through the centre. it has a delicious creamy texture, with a fresh clean taste that develops as the cheese ages into a rich aromatic piquancy. depending on taste, it is perhaps at its best towards the end of its life.
capricorn goat - capricorn goats’ cheese is made at the lubborn creamery in somerset, england. the cheese is made from milk collected from local farms situated in the beautiful valley of cricket st thomas, surrounded by lush dairy pastures. firm and crumbly when young, as it ripens from the outside towards the centre, a creamy yet mild flavour is formed underneath its velvety soft white coat.
wigmore - wigmore is a washed curd cheese made by anne wigmore, who founded village maid cheese in 1986 with her husband andy. it was developed in the early 1990s with much input and encouragement from neal's yard dairy – back then, they were actively looking for a semi-soft ewe's milk cheese to add to our offering. wigmore is made in riseley, berkshire, using a washed curd process in which some of the whey is replaced by water during the make, helping to give the cheese its characteristic smooth texture.
keen cheddar - keen's cheddar, a cow's milk cheddar from somerset, england, has been made by the same family for three generations and is among england's finest farmhouse cheddars. the keen family uses the west country tradition of cloth-binding and larding their cheeses and age the large wheels for nearly two years. keen's cheddar has a hard texture, distinguished grassy flavor, and hint of spiciness. farmhouse-made (meaning the milk used is solely from the cattle belonging to the farm, the cheesemaking is done on-site, and the cheeses are matured in their cellars) cloth-bound cheddar. full flavoured with a nutty fruity tang and a rich vigorous taste.
includes a sweet preserve accompaniment.
