the cheese selections for the month are:
roquefort papillon noire - this world-famous roquefort is a noble, all-natural ewe's milk blue cheese from the auvergne region of france. papillon (which means butterfly in french) wraps their top-of-the-line roquefort in black foil to distinguish it from lesser brands. aged for over 4 months in the natural combalou caves, this exceptional papillon roquefort is distinguished first and foremost by its white curd and the intense blue which generously marbles its wide and numerous cavities. the taste of a good roquefort is similar, in terms of analysis, to a grand cru wine: balanced and salty, with a big personality. in the mouth, its unctuous and supple texture melts deliciously with a recognizable taste and leaves you with a powerful and lingering aftertaste.
golden cross - golden cross cheese is sweet, soft and delicately ‘goaty’ and grassy, with an ice-cream like texture. kevin and alison blunt make golden cross from the milk of their own goats, which are fed only on pasture or hay (no silage for them!). the recipe is loosely based on the famous sainte maure goats’ milk log from france, but with a bloomy penicillium candidum coat and slightly firmer paste. the young cheese is rolled in ash, and then matured for a couple of weeks to allow the growth of a natural rind and the development of a more complex flavour.
scottish anster cheese - anster is a farmhouse cow's milk cheese made in fife, scotland, by st andrews farmhouse cheese co. crafted using raw milk from their home-bred herd of holstein friesian cows, which graze the fields overlooking the firth of forth, this firm, crumbly cheese boasts a slight tang. made by hand using traditional techniques and based on a cheshire recipe, anster offers wonderfully fresh, milky notes and a lively zing. its gentle, fresh flavours of lemon peel and natural yoghurt sharpness culminate in a full-flavoured acidic finish. enjoy anster with crusty fresh bread and your favourite craft cider, or for an extra special treat, pair it with fruitcake.
flower marie - flower marie is a delicate little artisan cheese made from unpasteurised sheep’s milk by kevin and alison blunt on greenacres farm. incredibly soft in texture, with an almost fudgy taste, combined with rich and floral notes. the milk is sourced from a herd of friesland-dorset sheep, and as it ages it develops a more intense flavour, but the texture gets far gooier. gold winner at the 2017 artisan cheese awards.
